In Barbados, the traditional wedding cake is called Great Cake or Black Cake. Black cake is basically dried fruits which have been finely minced, left to steep in rum and aromatic spices and mixed with batter to produce a very rich and delicious cake.
Rum Cake is another popular flavour which is well-liked by both locals and visitors to the island. Rum cake is a yellow cake which has been infused with our local rum to produce a moist and delicious cake.
Signature Cakes
We produce two signature cakes which are very popular for weddings but also for special occasions like Christmas, Birthdays etc. Rum is a by-product of sugar cane producing countries like Barbados and plays an integral part in the flavouring of cakes, desserts and cocktails. Rum is therefore the base of our two signature cakes, Black Cake and Rum Cake.
